  • 600g of salsify
  • 600g of potatoes
  • 60g of butter
  • 40g of flour
  • 75cl of milk

Preparation :

Start by peeling the salsify and potatoes, then slice them into rounds. Cook the salsify in boiling salted water for about 20 minutes, then set aside. In a saucepan, melt the butter and add the flour while mixing well. Gradually incorporate the milk, continuing to mix to obtain a creamy béchamel sauce. Season with salt, pepper, and nutmeg to your taste.

Preheat your oven to 180°C. Butter an oven-safe dish, then arrange a layer of salsify followed by a layer of potatoes. Pour a little béchamel sauce on top, then repeat the operation until all the ingredients are used up. Finish with a layer of grated cheese.
