A perfect brunch with this recipe for sweet potato pancakes and poached egg avocado

Step 1: Preparing the sweet potatoes

First of all, you need to take care of the sweet potatoes. Thoroughly wash your sweet potatoes under water, peel them and then grate them finely. Place them over towels or absorbent paper to remove excess water, this will make your patties more crispy.

Step 2: Making the patties

Mix the grated sweet potatoes with salt and pepper, until you achieve a uniform consistency. Then, using your hand or a spoon, form patties of any size you prefer. You can vary their thickness to your liking, but keep in mind that too thin patties may break easily.

Gently approach your container holding the egg, then gently pour the egg in the center of the swirl. The water’s movement will help the egg white to uniformly envelop the yolk.
