  • Salted cod (300 g) : It provides the melt-in-the-mouth texture and pronounced fish flavor that characterize West Indian cod fritters. Do not forget to properly desalt your cod before cooking it, by soaking it in cold water for a minimum of 12 hours, regularly changing the water.
  • Flour (200 g): Flour is an excellent binding ingredient, it will allow you to obtain a smooth dough that’s easy to work with to form your dumplings effortlessly. You can use regular wheat flour or opt for gluten-free flour if you are intolerant.
  • Baking powder (1 teaspoon) : The baking powder adds a little lightness to the dough thanks to its rising power. Do not skip this step, as it is what will provide this balance between density and lightness to the Antillean cod fritters.
  • Salt and pepper: Essential for seasoning your preparation, salt and pepper will enhance the natural flavors of the cod and the other ingredients.
  • Frying oil: The oil should be hot enough (around 180°C) to allow for a quick cooking of the accras. This way, they will be nicely crispy on the outside and meltingly tender on the inside.

The preparation of West Indian cod fritters

The traditional recipe unfolds in several steps:

Desalt and crumble the cod

After having desalted your cod as previously indicated, cook it in a pot of water for 10 to 15 minutes. Once thoroughly cooked, drain it and let it cool before finely crumbling it up with your fingers or with a fork.

Make the accras dough

In a large bowl, mix the sifted flour, yeast, salt and pepper, then gradually add warm water while stirring. You should end up with a semi-liquid dough, without lumps. Let it rest for a few minutes.

Incorporate the other ingredients

Then add to the dough the crumbled cod, the green onion (or chives), the chopped garlic, parsley and chili pepper according to your taste. Make sure to mix well to evenly distribute all the ingredients.

Fry the accras

Heat the frying oil in a large pot or deep-fryer.
Use two teaspoons to scoop small amounts of dough and gently slide them into the hot oil. The fritters should be well-browned, crispy on the outside and soft on the inside. Let them drain on absorbent paper before enjoying them hot or warm.
