  3. Sand the dough with your fingertips to thoroughly mix the ingredients, then gradually incorporate the sugar and the egg while continuing to work the dough until it is uniform.
  4. Form a ball with the dough and wrap it to let it rest for 30 minutes in the refrigerator.

Know that a good pie dough must be sufficiently flexible so as not to tear but firm enough to hold during cooking. If you find your dough too crumbly or difficult to work with, don’t hesitate to add a little cold water (about a tablespoon) and knead again before tasting once more.

In the kitchen, it’s not always easy to determine whether our fruits are ready to be consumed or not. For peaches, opt for those that have a firm flesh without too much softness, but which yield slightly under finger pressure. The best peaches for this recipe will therefore be ripe but still firm enough not to fall apart during cooking.

Assembling and baking the rustic peach and fresh cream tart

All you have left to do is assemble and bake your pie:

  1. Preheat your oven to 180°C (thermostat 6).
  2. Remove the dough from the refrigerator and roll it out on a lightly floured work surface to get a circle about 30 cm in diameter.
  3. Place a sheet of baking paper on a baking tray and gently lay the pie dough on it.
  4. Spread the thick crème fraîche over the pastry base, leaving a free border of approximately 3-4 cm around the edge.
  5. Then evenly distribute the peach quarters over the cream, and fold the pastry border over the fruit, pinching it with your fingers to make it stick.
  6. Sprinkle the brown sugar all over the surface of the pie, as well as some slivered almonds if you wish.
