Strawberry pie is a dessert much appreciated by many people, both for its tart taste and its beautiful presentation. But why not add a touch of originality by incorporating basil? In this article, you will discover how to prepare a delicious pie with strawberries and basil, combining the flavour of the fruit with that of herbs for a unique taste experience.
Preparation of the sweet dough:
The base of the tart will be made with crumbled Breton shortbread cookies that will be well compacted at the bottom of a buttered tart mold. To do this, simply reduce the shortbread cookies to crumbs of Breton shortbread.
To give even more flavor to your sweet pastry, you can also use other types of sandy cookies.
Necessary Ingredients:
- 200g of Breton biscuit crumbs
- 100g of melted butter
Preparation:
Mix the crumbs of Breton biscuits and the melted butter in a bowl, in order to get a homogeneous preparation. Then pour this preparation into the bottom of a pie tin and compact it well with the back of a spoon or your fingers to form a solid base. Let it rest in the refrigerator while you prepare the filling.

Once cooked, let it cool before adding the final layer of basil cream.

Preparation:
In a saucepan, bring the milk to a boil with the sugar and roughly chopped basil leaves. When the mixture simmers, remove from heat and let infuse for at least 15 minutes under a lid. In a second bowl, whisk together the egg yolks and cornstarch until the mixture becomes frothy. Gradually incorporate the warm milk (having filtered out the basil leaves) into the bowl containing the eggs. Pour this mixture back into the saucepan used initially to heat the milk and cook over medium heat until thickened, stirring constantly.
When the basil cream has reached the desired consistency, pour it over the lemon almond cream and let it cool at room temperature, then store in the refrigerator.
The final touch: gilding and strawberries
To finish this strawberry and basil tart in a gourmet way, you will need to create a light glaze with an egg yolk diluted with a little water. Brush it around the edge of your sweet dough with a silicone brush.

Once ready, your strawberry and basil pie is just waiting to be cut into slices and enjoyed!
